
Method
Heat oven to 200C/180C fan/gas 6. Heat the oil within an ovenproof fry pan and fry the onion for around ten mins more than a medium heat until golden. Add some garlic clove and curry powder and prepare for 1-2 mins.Next, add some grated taters and prepare for five-8 mins, stirring from time to time. You would like the taters to melt, but additionally catch just a little and switch golden in patches. Season the eggs, then pour in to the pan using the peas and the majority of the coriander, swirling to coat the potato mixture. Prepare for 1 min more, then transfer towards the oven for ten mins before the eggs have set. Sprinkle using the remaining coriander and serve with mango chutney, low fat yogurt and naan bread, if you want.
